Itaconic Acid (also called Methylene Succinic Acid) is a white crystalline carboxylic acid obtained by the fermentation of carbohydrates. Het is oplosbaar in water, ethanol en aceton. Onverzadigde vaste binding maakt een geconjugeerd systeem met koolstofgroep.
